Thoughts on Cauliflower

29 January 2011

“Cauliflower is nothing but cabbage with a college education.”  Mark Twain

Cauliflower heads emerge from the blue-green leaves in my garden. This heirloom variety, Early Snowball, appears to be somewhat self-blanching.  I’ve tied the leaves though to keep the curds white. Maybe next year I’ll try a purple or Romanesco cauliflower.
